Roasted Italian Sausage
Roasted Italian Sausage is proof that Italian Cooking needs little to give a lot: just choose excellent ingredients and put them in the oven. A recipe that prepares and cooks practically by itself I thought a lot before adding “Italian” to the title of this recipe: in fact, preparations like this belong to all gastronomic cultures. This recipe, however, acquires a purely Italian touch when you use fresh aromatic herbs (avoid ready-made mixes in a jar) and, above all, when you find and buy Italian sausages (with that beautiful pink color flecked by the white of the fat) which, allow me to be exaggeratedly parochial, are a true masterpiece of taste
Ingredients
- Fresh Italian Sausages 4 (or more, it depends from your appetite)
- Potatoes 8 (about 1 kg)
- Onions 2
- Mushrooms 600gr
- Extra Virgin Olive Oil
- Salt&Pepper
- Fresh Aromatic Herbs (Sage, Rosemary, Bay Leaf)
Instructions
Wash and peel all the vegetables. Cut the potatoes into rather large pieces, the mushrooms in 4 and slice the onions in rings. Pierce the sausages with a fork, so that they do not split during cooking
Heat the oven to maximum temperature. Cover the bottom of the baking pan with parchment paper and arrange the potatoes and onions. Season with plenty of oil, a little salt (the sausages are tasty and you can add it at the end), a generous handful of pepper and mix with your hands, so that every piece is flavored well
Add the sausages and finally the aromatic herbs
Put in the oven, lower the temperature to 180 ° / 375F and let it cook for about 30 minutes but checking often. Stir the vegetables one last time and add the mushrooms. Cook for another 15 minutes. At the end of cooking, check that the sausages are cooked by making a small cut: the inside must not be pink
Bring it to the table immediately to the delight of your guests
